Walton's Southwest
Chili |
|
Ingredients:
2 cans Mexican Chili Beans (or ranch beans)
2 cans Diced Tomatoes
1 ¾ c. Water (or tomato juice)
4 oz. Southwest Marinade (#4530920150)
¼ c. Flour
2 lbs. Hamburger, browned
Add 1-can Mexican chili beans, 1-can tomatoes, marinade and
the flour to a blender. Process until well blended. (This
will give your chili a thicker consistency.) Put blended
mixture in 6 quart crock pot (or similar size pot.) Use the
1 ¾ c. water to rinse remaining mixture from the blender and
then add this water to the crock pot. Add remaining 1-can
Mexican chili beans, 1-can tomatoes and the hamburger to
your crock pot also. Simmer chili for several hours on low.
You may add more water (or tomato juice) to make your chili
milder or a more soup like consistency. Top chili with your
choice of sour cream, grated cheddar, corn chips, pickles,
or whatever you prefer.

Tender Roast |
|
Ingredients:
3-Lb Chuck Roast
2 – Small yellow onions Quartered
1 – Small package Baby Carrots
4 – Celery Sticks Chopped
1 – Can Whole White Potatoes (do not drain)
Meat Marinade (#4530960030)
Liberally shake Meat Marinade over Chuck Roast. Place
seasoned roast in crock-pot. Add the onion, carrots, chopped
celery, and whole white potatoes. Cover and turn crock-pot
on low. Cook all day or 8 hours. Serve with cottage
cheese and apple sauce.*
*Sprinkle a little Excalibur Cinnamon Toast (45309602240)
blend over the Apple Sauce. |

Prime Rib 1 |
|
Ingredients:
8-10 lb. Boneless Prime Rib Roast
Prime Rib Rub (4530960120)
Liberally rub entire surface of Boneless Prime Rib Roast.
Place seasoned Prime Rib in Electric Roaster. Set heat on
250°F. Bake for 6 hours or 145°F internal temp. for rare;
155°F for medium; or 165°F for well done.
Save all the Au Jus. Slice 1” thick and ladle au jus
over meat until browned if desired. |

Prime Rib 2 |
|
Ingredients:
1-4 6 lb. Boneless Prime Rib Roast
Prime Rib W/Grill Flavor (#4530960340)
Liberally rub Prime Rib W/Grill Flavor
over the entire surface of the Prime Rib Roast. Place
seasoned roast in large roasting pan and cover, or place in
an electric roasting oven. Turn oven to 250°F, cook roast
until internal temperature of 158°F. (6-8 hours) Slice
into 1” thick slices and baste with au jus. Serve with
mashed potatoes and use the remaining au jus as gravy.
To make Gravy, thicken the au jus place
the remaining au jus in a skillet over medium-high heat. Add
1 cup of cold water with 1 TBS cornstarch dissolved into it.
Bring to a boil. Serve when gravy has reached the desired
thickness. |

Mexican Dip |
|
Ingredients:
1 – 15 oz. can refried beans
½ – Pint Sour Cream
1 – Cup Salsa
1 – Lb. Cooked Taco Meat (seasoned w/Taco Seasoning
#4530960240)
1 to 2 cups shredded cheddar or Colby cheese
2 – Cups Shredded Lettuce
1 – Package tortilla chips
Using a glass loaf pan, layer the refried
beans, sour cream, salsa, taco meat, and shredded cheeses.
Dip chip into the Mexican dip and enjoy. |

Ground Beef Base |

Ingredients:
3 – Lbs. Ground Beef 85/15
1 – Large Yellow Onion, chopped
2 – TBS Extra Virgin Olive Oil
1 – TBS Excalibur Garlic Pepper

In a large skillet over medium-high heat,
add 2 TBS olive oil, chopped onion, Garlic Pepper and ground
beef. Brown completely and drain fat.
Use in any dish that call for ground beef. |

Beef Stew |

Ingredients:
2 to 3 Lbs. Chuck Roast
2 – Cans Sliced White Potatoes (un-drained)
2 – Cups water
4 – TBS Vegetable Soup Mix (#4530960170)
Pour the sliced white potatoes, the water,
and the Vegetable Soup Mix into a crock-pot. Place the Chuck
Roast in the crock-pot and turn heat on low.
Cook all day (8 hours). Meat should be fork tender. Break
meat into smaller pieces and remove fat, and any sinew. Add
water and/or beef broth if needed. |

Sloppy Joe's Recipe |
|
Ingredients:
3 – lbs. Ground Beef, cooked and drained
3 – TBS Smokehouse BBQ Seasoning & Rub (#4530960310)
1 – cup Onion, or Garlic Ketchup (#4530921555 or
#4530921545)
1 – TBS Yellow Mustard
1 – TBS Sweet Pickle Relish
1 – TBS Dill Pickle Relish
Cook ground beef thoroughly, drain fat if
necessary. Add more ketchup if needed. |

Killer Chili |
|
Ingredients:
3 – Lbs. Ground Beef
3 – Cans Chile Beans
3 – Cans Red Kidney Beans
1 – Medium size yellow onion, chopped
2 – TBS Ground Cumin (#4530960440)
1 – TBS Vinegar
1 – Can Stewed Tomatoes
Killer Chili Seasoning (#4530960640)
Brown ground beef and drain fat.
In an 8-quart pot over low heat, add all the above
ingredients. Add water until desired consistency. Serve with
shredded cheddar cheese and nachos. |

Ultimate Chili |
|
Ingredients:
1 – TBS Extra Virgin Olive Oil
3 – 30 oz. Cans tomato sauce (unflavored)
2 – cups water
4 – 16 oz. Cans Red Kidney Beans (unflavored, drained and
rinsed)
3 – Lbs. Ground Beef (2 lbs. cooked weight)
1 – Shaker Excalibur Ultimate Chili
Seasoning (#4530964750)
In a large skillet on medium-high heat,
add 1 TBS olive oil. Crumble hamburger into skillet and
brown. Drain fat.
In an 8-quart pot over medium-low heat, pour the 3 cans of
tomato sauce, 2 cups water, 4 cans kidney beans and the
entire bottle of Ultimate Chili Seasoning. Slowly heat up
for 20 to 30 minutes. Add browned ground beef and simmer 1
to 2 hours. |

Meat Loaf |
|
Ingredients:
2 – Lbs. Ground Beef 80/20
Meat Loaf Seasoning (#4530960090)
Onion Ketchup (#4530921555)
Mix 2.5 oz. Meat Loaf Seasoning into 1-cup
cold water. Mix reconstituted Meat Loaf Seasoning into
2-lbs. ground beef. Place meat batter into a loaf pan. Top
meat loaf with 2 TBS Excalibur Onion Ketchup.
Place into 350°F preheated oven and bake for 1 hour or until
a 160°F internal temperature is reached.
Serve with Au gratin Potatoes made with Excalibur Onion
Pepper (#4530964660). |

Butter Flavored Chuck
Roast |
|
Ingredients:
1 – 2 to 3 lbs. Boneless Chuck Roast
2 – Cans Whole White Potatoes (un-drained)
1 – Large Yellow Onion, quartered and separated
1 – Small Package of Baby Carrots
Italian Flavored Roast Beef Seasoning
(#4530960760)
Liberally rub the entire surface of chuck
roast and place in crock-pot. Add the whole white potatoes
(un-drained), yellow onion and baby carrots.
Turn crock-pot on low heat and allow to cook all day (8
hours).
Serve with oven baked Italian Bread and a side salad. |

BBQ Ribs |
|
Ingredients:
2 – Lbs. Country Style Ribs
1 – TBS Olive Oil
BBQ Seasoning (#4530960000)
In a 6-quart casserole dish, pour the olive oil and spread.
Lay the Country Style Ribs in the dish. Liberally shake on
BBQ Seasoning until top of meat is covered. Cover dish with
aluminum foil. Preheat oven to 350°F. Bake for 1 hour 15
minutes. Remove aluminum foil and bake for 15 more minutes.
Serve with baked beans and a garden salad with French
dressing. |
